Cook at Home Challenge

Thomas and I notoriously order out way too much. The convenience is just too tempting given we are in the thick of the little kid years with 4 kids in the mix. Sincerely put: it’s time for us to delete our DoorDash Apps. We are always happier when we do eat at home because the food is just better (except sit down restaurants, we love a good restaurant). So I’ve challenged myself with making 2 new dinner recipes that I have not tried before in order to keep things interesting. Don’t worry, this isn’t a Hello Fresh ad ha-ha! I dug in deep to my Barfefoot Contessa Library and scanned for the 2 easiest and cost effective recipes that sounded delicious, here’s what happened:

Roasted Salmon with Green Herbs

Notes: I normally purchase the fresh wild caught Atlantic Sockeye Salmon from Costco and just do a simple lemon/salt/pepper number on them. This recipe was way more flavor intensive than my norm.

Will I make this again?

Salmon is tricky for me as I think it has a rather strong flavor on its own and don’t want anything too overpowering. I will most likely skip this next time but I know that other salmon lovers will find this to be a winner.

Crispy Chicken with Lemon Orzo

Book: Modern Comfort Food

Notes: The feta in the orzo really adds salt to the overall dish so do not add any salt. The chicken calls for European butter and I used Kerrygold, worked great for crisping.

Will I make this again? Yes & No. Yes to the chicken, it was flavorful, crispy, and juicy. The Lemon Orzo I can do without ( I wasn’t wowed by it).
