Blue Cheese Crumbles (Trader Joe’s)

Red Onion

Iceberg Lettuce

Cherry Tomatoes

Bacon

Lighthouse

Balsamic Dressing

Lighthouse Blue Cheese

Cracked Black Pepper

In our house we eat this wedge salad at least once a week as a pairing for steak. When people come to visit from out of town they always request that this is on the menu during their stay. I feel strongly that there are three ingredients in this particular recipe that set this wedge over the edge: the dressings and the crumbles. Litehouse nails it with their blue cheese and ranch options but when I tried their balsamic for this salad I struck gold. The taste is exactly what you would expect from your favorite steak house. Trader Joes blue cheese crumbles strike the same chords, while other store bought blue cheese crumbles can come off as rancid, this one has that creaminess that I was looking for.

HOW TO:

Cook 2 strips of bacon, dice, set aside.

Finely dice red onion, set aside.

Cut cherry tomatoes in half, set aside.

Cut iceberg lettuce head in half, remove core, then cut those halves in half until you have a total of 4 mini wedges.
Carefully holding the wedge in tact, tilt sideways to let water run between the leaves to clean the lettuce.

Lay wedges on their sides on top of paper towel to drain.

Plate 2 wedges per plate.

Lightly separating the lettuce leaves, tilt wedges on their sides and drizzle balsamic dressing on each side creating a zig zag pattern.

Repeat previous step with blue cheese dressing.

Sprinkle onions, blue cheese crumbles, cherry tomatoes and bacon pieces (in this order) on top of the wedges.

Generously crack black pepper over salad.
